ВИРОБНИЦТВО МОЛОКА ТА МОЛОЧНИХ ПРОДУКТІВ В УКРАЇНІ: РЕГІОНАЛЬНІ АСПЕКТИ
Анотація
Досліджено динаміку виробництва молока та молочних продуктів в регіонах України, а також регіональну структуру молочної промисловості. Визначено, що лідерами з виробництва молока були Вінницька, Житомирська та Київська області, що виробляли близька 72,54% молока в Україні; виробництво вершкового масла було зосереджене у Вінницькій, Хмельницькій, і Київській (40,53%); сирів — у Полтавській, Київській і Миколаївській (43,43%); інших молочних продуктів — у Київській, Дніпропетровській і Вінницькій областях (54,50%). Визначено ступінь переробки молока (сировини) у регіонах, на основі цього виділено області з найбільшою часткою переробки молока у промисловому виробництві молочної продукції: Київська, Вінницька, Дніпропетровська та Житомирська. Досліджено структуру молочної промисловості областей та їх спеціалізацію на виробництві молочної продукції.

MILK AND DAIRY PRODUCTION IN UKRAINE: REGIONAL ASPECTS
Summary
Production of milk and dairy products is one of the key directions of the food industry of Ukraine. The development of this sector of industry contributes to the food security of the state, as well as contributes to the development of export potential. In recent years, there has been a clear division of regions in Ukraine in the specialization of the dairy industry. Therefore, it is advisable to study the dynamic and structural changes in the dairy industry in the regions, in order to identify the problems of dairy industry development in the regions.
The dynamics of milk and dairy production in the regions of Ukraine as well as the regional structure of the dairy industry is investigated. Decreases in production volumes in Ukraine (2013—2019) of butter, cheese and other dairy products and increase in milk production have been revealed.
It was determined that the leaders in milk production were Vinnytsia, Zhytomyr and Kyiv regions, which produced close to 72.54% of milk in Ukraine; butter production was concentrated in Vinnytsia, Khmelnytskyi and Kyiv (40.53%); of cheese — in Poltava, Kyiv and Mykolaiv (43.43%); other dairy products — in Kyiv, Dnipropetrovsk and Vinnytsia regions (54.50%). The degree of milk processing (raw materials) in the regions was determined, on the basis of this the regions with the highest share of milk processing in the industrial production of dairy products were identified: Kyiv, Vinnytsia, Dnipropetrovsk and Zhytomyr.
The structure of dairy industry of oblasts and their specialization in dairy production are investigated. Consequently, milk production accounted for 55.93% of all dairy products in 2019 and other dairy products (28.60%) in the structure of Ukrainian dairy products; and 5.00% respectively. Accordingly, milk production prevailed in most regions, so in 2019 milk production was predominant in 11 oblasts, butter in 2 regions, 4 cheese, 5 other dairy products, and 2 oblasts did not process milk.
The ways of development of dairy industry in the regions, in particular, are offered to diversify the production of dairy products, to promote non-waste production and save resources, to increase the range of dairy products, to promote the development of dairy cattle (as a basis for the growth of raw materials), and more.
